You’ve worked a full day, and are not thrilled about coming home to prepare an elaborate meal that someone in your family will not like and most likely, complain about. That’s when Taco Night enters the scene. The cheese is already shredded because you’ve bought it that way from the store. Costco has magically provided you with fresh guacamole, so you don’t need to be worried about whether the avocados you bought are ripe enough. The salsa just needs to be thrown in a bowl. And the lettuce takes five minutes to wash and cut. Throw the ground meat in a pan, and you’re good to go in twenty minutes. However, if you’d like to take it up a notch, and you’re feeling inspired, chop up those beautiful red, orange and yellow peppers before throwing them into a pan to sautéed with just a bit of olive oil. Once those are cookin’ cut up some red onion and throw those into the pepper mix as well. Get the kids to set the table for some points, which can be redeemed at the end of the month for a reward, and seat yourselves down for a glorious meal that everyone loves. There is not one complaint, every child and adult is eating without being prodded or coaxed, and you’re finally able to breathe and relax. And THAT CHANGES EVERYTHING!
